Make a meaningful impact as a Commis Chef with Maialino!

The Commis chef position is one of the most vital positions in the Maialino kitchen. Serving as the culinary backbone of our restaurant, the commis chef oversees and maintains food production levels across all meal periods and services. Some of the kitchen responsibilities include making stocks & sauces, cooking braises, charcuterie, pickling and fermenting market produce.

Maialino relies heavily on the Union Square Green Market.  We utilize the farmers market whenever possible and as a result of this we have come to develop strong relationships with many local farms that populate the market.  The commis chef is responsible for maintaining our relationships with these farmers and to cultivate any new relationships that may develop along the way. The commis chef is responsible for making market trips three times a week to purchase any produce that the restaurant requires. Additionally, the commis chef is expected to evaluate all produce and maintain quality standards of all product purchased.

This position requires availability Monday through Friday, hours ranging between 7 AM to 7 PM depending on needs of the production schedule.  Starting pay rate is $18 and varies based on experience.  This is an amazing opportunity to network with farmers and gives you firsthand experience at creating some of the most memorable Roman dishes in New York City

Skills & Requirements Qualifications Maialino is a Roman-style trattoria inspired by the rustic cuisine of the Eternal City. Overlooking Gramercy Park, Maialino captures the warmth and comfort of a true neighborhood trattoria, reimagined for its contemporary setting. Executive Chef Matt Spivey’s thoughtful Italian cuisine blends the rich cultures of both New York City and Rome. Sourced from its local family of farmers and suppliers, Maialino integrates quality, seasonal ingredients throughout the menu, including Executive Pastry Chef Jessica Weiss’ beautiful, rustic desserts. The restaurant is open continuously throughout the day, serving breakfast, lunch, weekend brunch, dinner, and late night, as well as to-go coffee and pastries.
