Pastry Supervisors are responsible for overseeing the daily preparation, production and presentation of food items for service. Pastry Supervisors are to ensure the proper quantifying of menu items, ordering of product and upkeep of daily organization of the pastry kitchen. In addition to playing a large part in the actual production, Pastry Supervisors are to ensure the quality of product executed by the Pastry Cooks they are overseeing. Pastry Supervisors are expected to develop an understanding of how Maialino and Gramercy Park Hotel work in tandem.
The Pastry Team at Maialino is a large part of the Culinary Team employing 13 full-time cooks, up to 2 interns and 3 sous chefs. There are 4 shifts within our team in order to accommodate the large variety of items prepared for the restaurant, a retail and online program, as well as the Gramercy Park Hotel.
Our pastry kitchen is structured for learning and growth. All of the shifts offer different skills and challenges. This well rounded path pushes the team to learn a wide variety of techniques from laminating dough to making gelato. We uphold high standards of excellence and consistency. It is paramount that we always put the best of the best in front of our guests.
All of our products are made in house, using quality ingredients and sound pastry techniques. We like to say that dessert should be a “warm hug” at the end of your dining experience. Responsibilities include, but are not limited to:
- Proper scaling of ingredients
- Maintain a clean, neat and organized workstation
- Work well as part of a team
- Properly read dessert orders and plate them in a quick and efficient manner
- Prepare all menu items following recipes and yield guides, according to departmental standards
- Proper set-up of the service line (stocking, pars, pastry items)
- Prepares products and garnishes as needed for service line
- Maintain a calm attitude when in a stressful, chaotic environment
- Ability to multitask

Qualifications & Education Requirements:
- A culinary degree in baking and pastry is preferred, but not required. 1-2 years experience in the field will be accepted as education.
- Experience in basic pastry skills, knowledge of mixing methods, pastry line plating experience and proper scaling techniques.
- Strong work ethic and ability to multitask.
