Truce will be opening in mid-May. Positions are available to start on 5/4.

Hours of Operation:
7:00 AM – 9:30 PM. Serving breakfast, lunch, and dinner.

We're searching for fabulous Prep Cooks to join our team!!

Position Summary: The Prep Cook is the foundation of the Truce kitchen, responsible for transforming raw, high-quality ingredients into the building blocks of our menu. Because we are a 100% scratch kitchen, your role is vital: you ensure every sauce, protein, and vegetable meets our clean standards before the doors even open. You are responsible for precision, consistency, and speed, ensuring the line is set for success with fresh, chef-driven components prepared without shortcuts or seed oils. 

Culinary Execution 

  • The Scratch Standard: Execute daily prep lists with total accuracy. Follow recipes exactly to maintain our promise of all-natural ingredients and zero seed oils. 
  • Technical Precision: Maintain consistent knife cuts and portioning to ensure uniform cooking and presentation.
  • Volume Management: Efficiently manage your time to complete high-volume prep tasks (scaling recipes, butchery, vegetable prep) within designated timeframes. 

Quality Control & Freshness 

  • Ingredient Integrity: Inspect all produce and proteins upon arrival for freshness. If it doesn’t meet our premium standard, alert the Kitchen Lead. 
  • FIFO & Rotation: Maintain strict First-In, First-Out (FIFO) standards. Label, date, and store all prepared items correctly to minimize waste and ensure peak flavor.
  • Taste & Texture: Conduct quality checks on prepared batches to ensure seasonings and textures align with the Truce flavor profile. 

Sanitation & Safety 

  • Workspace Excellence: Maintain a clean, organized, and sanitized station.  
  • Allergen Awareness: Follow strict protocols to prevent cross-contamination, ensuring our health-focused guests are protected.
  • Equipment Care: Safely operate and clean food processors, mixers, slicers, and industrial scales. 

Required Knowledge and Skills: 

  • Professional Experience: 1–2 years of experience in a professional kitchen, preferably in a scratch-cooking environment. Mastery of basic knife skills is required.
  • Ingredient Knowledge: Familiarity with raw, whole ingredients. Experience working in a no seed oil or health-conscious environment is a plus.
  • Detail Oriented: Ability to follow complex recipes and measurements with total consistency.
  • Reliability: An early bird mentality; the ability to show up on time and be prepared to power the kitchen's production. 

Qualifications: 

  • Above average math skills.
  • A positive attitude and good manners.
  • Neat personal appearance and proper personal hygiene.
  • Must be 18 years of age or older.
  • Ability to communicate effectively in the primary language(s) of the work location. Fluency in English may be essential for certain customer service stations within this position.
